Baked Breaded Mushrooms

Big fan of fried mushrooms but this recipe has won me over. None of the greasiness and amazing flavor. Throw in the added bonus of the kitchen smelling amazing while this one bakes and it's a win-win.


Ingredients

20 white button mushrooms - small ones are easier to eat since they'll pop with hot liquid when you bite it to them so big ones can get messy

3 Eggs

1 Cup breadcrumbs (either plan or herbed)

½ Cup AP Flour

3 tsp grated parmesan - grate it fresh, it makes a difference

½ tsp Paprika

½ tsp Salt

½ tsp Black Pepper

3 Cloves of Garlic

Cooking Spray


Directions

  1. Preheat the oven to 400F

  2. Combine the breadcrumbs, parmesan cheese, paprika, salt and pepper

  3. In a 2nd bowl, combine eggs and minced garlic

  4. In the 3rd bowl, combine flour with salt and pepper

  5. Clean and dry the mushrooms

  6. Coat with the flour mixture, then the egg mixture, then the breadcrumbs

  7. Place on a wire rack for cooking and spray a liberal coat of cooking spray

  8. Cook for 12-16 minutes, until crispy and golden brown

  9. Allow to cool before serving, those mushrooms will be lava hot
