Cod Au Gratin


This is not one of Mike's favorites so I try to do this when either a) he's not around or b) he's got leftovers that he really likes from the previous night. This is good over mashed potatoes, baked potatoes, rice or pasta - whatever's in the house really. 📷

Ingredients

2 pounds cod fillets

3 tablespoons margarine

6 tablespoons all-purpose flour

2 cups milk salt and ground black pepper to taste

1 1/2 cups shredded Cheddar cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Grease an 8x 12 inch baking dish.

  3. Bring a large pot of lightly salted water to a boil.

  4. Add cod fillets and cook for 4 to 6 minutes; drain.

  5. Melt margarine in a medium saucepan.

  6. Remove from heat and mix in the flour and milk.

  7. Return to stove over medium heat, and stir until thickened.

  8. Season with salt and pepper.

  9. Flake fish into baking dish, alternating layers with sauce.

  10. Sprinkle top with shredded cheese.

  11. Bake in preheated oven for 20 to 25 minutes, or until cheese is browned.

Retrospective

Next time I'm going to try poaching the fish in half the milk to try to preserve more of the nutrients, and increase to 2 1/2 cups of milk since the sauce was a little on the thick side.
