Mike's Porcupine Meatballs


Mike made this on one of our first dinner dates. Now it's a favorite with the whole family. Great on weeknights, it takes about an hour to get on the table but 40 mins of that is just simmer time so it's a nice opportunity to get some extra chores done while it's bubbling. 📷

Ingredients

1 lb Ground Beef

1/4 cup Uncooked Rice

1 can Cream Of Chicken Soup

1/8 cup Parmesan Cheese

1/8 cup Seasoned Bread Crumbs

1 tsp Salt

1/4 tsp Pepper

1 Egg

1 cup Milk


Directions

  1. Thoroughly combine ground beef, 1/4 cup of chicken soup, rice, egg, cheese, breadcrumbs, salt and pepper.

  2. Use an ice cream scoop to shape into meatballs and brown in large frying pan.

  3. Mix remaining soup with milk, pour over meatballs, cover, and simmer for 30-40 minutes or until rice is tender.

  4. Serve over pasta.
