Pork chops w/ Dijon cream sauce

Delicious pork ready in less than 30 minutes

Ingredients
4 boneless pork chops
2 tablespoons butter
2 tablespoons oil
Salt & pepper to taste
Sauce
1 cup chicken broth
1 cup heavy cream
2 teaspoons minced garlic
2 tablespoons Dijon mustard
1 tablespoon butter
½ teaspoon salt
¼ teaspoon cracked pepper

Directions
Preheat to 425°F
Generously season chops on both sides with salt and pepper
In a large skillet melt the butter and drizzle in the oil
Cook chops for 2-3 minutes each side
Remove the chops
If you're using a cast iron skillet to sear the pork lower the temperature and let it cool down before starting the sauce or it will incinerate the garlic
To start the sauce add butter to the pan
Once melted add garlic and toast until fragrant (2 minutes)
Add the chicken broth
Whisk in Dijon mustard, cream and add salt and pepper
Return the pork to the pan and spoon the sauce over the pork
Cook in the oven for 10-15minutes or until pork is cooked and sauce has thickened
Pork is done at 145°F
Spoon the sauce over the chops and finish with fresh herbs
