Spice Rubbed Roast Pork Loin w/ a Honey Butter sauce (Slow Cooker)

5lb pork loin
Spice Rub:
2 tsp paprika
2 tsp thyme
1/2 tsp cayenne pepper
1/2 tsp pepper
2 tsp salt
Olive Oil (to prep and sear the loin)
Honey Butter Sauce
3/4 cups of honey
1/2 cup of butter
5 cloves of garlic, minced
1/4 cup of apple cider vinegar
1/2 tsp salt
1/2 tsp pepper
3 tsp cornflour/cornstarch mixed with 1 tbsp. water
Rub the pork with some oil to hold the spice rub,
Sprinkle the spice rub all over the pork and rub in
Add some olive oil to the pan and sear the pork.
Put the pork in the slow cooker and put it on low
Wipe out the pan with a paper towel and start the sauce
Add the butter and let it melt.
Add the garlic and let it cook until fragrant
Add the honey, vinegar, salt and pepper
Let it cook down for 5 minutes
Add the sauce to the slow cooker
Cook on low for 4-5 hrs, use a meat thermometer to track when it gets to 145 degrees F
Once the pork reaches temperature remove it from the slow cooker and let it rest
Pour the sauce from the slow cooker into a saucepan, bring it to a boil to reduce and add the cornflour/water mix to thicken
