Sweedish Meatballs

Ingredients
2 Slices of fresh white bread
1/4 cup of milk
3 tbsp clarified butter, divided
1/2 cup finely chopped onion
l tsp + a pinch of salt
3/4 lb ground chuck
3/4 lb ground pork
2 large egg yokes
1/2 tsp black pepper
1/4 tsp ground allspice
1/4 tsp nutmeg
1/4 cup AP flour
3 cups beef broth
1/4 cup heavy cream

Directions
Preheat oven to 200 ° F
Tear bread into pieces and place in a small mixing bowl with milk and set aside
In a large, straight sided saute pan over medium heat melt 1 tbsp of clarified butter and sweat the onions with a pinch of salt and pepper
In a stand mixer, combine bread + milk mixture with ground chuck, pork, egg yokes,1 tbsp of salt, pepper, all spices and nutmeg and onions. Beat on medium for 1-2 minutes
Weigh meatballs into 1 Oz portions and place on a sheet pan, shape into rounds.
Heat remaining butter in a Saute pan over med-low heat. Saute meatballs until golden brown on all sides (7-10 minutes)
Remove meatballs to an ovenproof dish using a slotted spoon and place in a warmed oven
Once meatballs are all cooked, decrease the heat to low and add flour to the pan. Whisk until slightly brown (1-2 minutes)
Gradually add the beef stock and whisk until sauce begins to thicken.
Add the cream and continue to cook until it reaches the right consistency
Remove the meatballs from the oven and cover with the sauce to serve

Not bad for a first try. I thought we'd have loads for lunches but no joy, all gone in 1 night!
